WIC Inspired Recipe – Turkish Eggs

For this week’s WIC-inspired recipe we’re bringing you Turkish eggs! This dish is simple to make and uses WIC-approved ingredients.

Turkish Eggs, or Cilbir, is a traditional Turkish dish with simple ingredients like yogurt, garlic, red pepper flakes, poached eggs, & butter. There are records of çılbır being eaten by Ottoman sultans as far back as the 15th century, and it’s often known as Turkish comfort food. 

Today, Turkish eggs can make a great breakfast or snack using WIC ingredients, including eggs, yogurt, and whole wheat bread. 

Turkish Eggs (Cilbir)

3 Eggs

1 Clove of Garlic

½ Cup of Thick Plain Yogurt

2 tbsp Butter

2 tsp Red Pepper Flakes

3 Slices of Whole Wheat Bread

1 tbsp White Vinegar

Salt, Pepper, & Dill to taste

Spoon yogurt onto a plate & use the back of the spoon to spread it out. Melt butter in a saucepan on medium heat, add minced garlic & red pepper flakes. Stir until color is uniform & remove from heat.

Fill a large saucepan with 2 – 3 inches of water & bring to a boil. Reduce heat to medium-low, pour in vinegar, and keep at a simmer. Crack an egg into a small bowl or ramekin and gently slip the egg into the simmering water. Repeat with remaining eggs. Cook the eggs for 3 minutes until the egg whites are firm & the yolk has thickened but not hard. Remove eggs with a slotted spoon & add to plate with yogurt. 

Spoon the butter, garlic & chili pepper mixture on top of the poached eggs & sprinkle with black pepper, a pinch of salt, & dill to taste. Toast the bread until lightly browned. Dip into the Turkish eggs & enjoy! Makes 2 Servings.

WIC Inspired Recipes – Banana & Egg Pancakes

These banana & egg pancakes are quick & easy to make & can be enjoyed even by some of the pickiest toddlers. This simple pancake recipe only uses 2 main ingredients & is so delicious that you may never make regular pancakes again!

Banana & Egg Pancakes

2 Eggs

1 Banana

Cinnamon

Oil (Olive oil, etc)

Maple Syrup or Honey, Optional

Peel the banana & mash in a medium-sized bowl. In a separate bowl, crack the eggs & whisk them together. Pour eggs into the bowl of mashed banana, add a dash of cinnamon, and mix together. Heat a pan to medium heat & add oil. Slowly drop a large spoonful at a time of banana & egg mixture to pan & heat until golden brown on both sides. Top with honey, syrup, or your choice of fruit.

Enjoy!

WIC Inspired Recipes: Frittata Muffins

This easy frittata muffin recipe is a staple in my household. They make for a great healthy breakfast or tasty snack, & they’re perfect for meal prepping or when you’re on the go. Frittata muffins are great for using produce you have in your fridge waiting to be used.

Nonstick cooking spray

6 large eggs

½ cup whole milk

Salt & pepper

½ cup shredded cheese

Your choice of vegetables. I like to use the following:

⅓ cup chopped onion

⅓ cup chopped bell pepper

⅓ cup chopped spinach (fresh or frozen)

½ cup chopped portobello mushrooms

1 zucchini, sliced thin

Heat oven to 350, spray muffin pan with nonstick cooking spray. In a large bowl, whisk together eggs, milk, ¼ tsp salt, ⅛ tsp pepper. Stir in cheese & vegetables of your choice.  Divide batter evenly among muffin cups. Add one slice of zucchini to each muffin cup & press into egg mixture until covered.Bake for 20 minutes. Let the frittata muffins cool for 5 minutes, then remove from cups & serve. To reheat any leftovers, place in microwave for 30 seconds.

WIC Inspired Recipe – French Toast & Grilled Peaches

Looking for a delicious way to eat your WIC-approved foods. Give this WIC inspired recipe a try for breakfast, lunch or dinner:

French Toast & Grilled Peaches

Try out this breakfast classic with a fresh twist!

Ingredients:

4 slices of bread

4 eggs

1 ripe peach

1 tbsp Butter

Cinnamon

Honey or Maple Syrup

Powdered Sugar, optional

Cut slices of bread in half, triangle-shaped & set aside. Crack 4 eggs into a medium-sized bowl & whisk. Heat pan on medium-high heat & melt 1 tbsp of butter. Take a slice of bread & dip into egg mixture on both sides, then add to pan & repeat. Brown each side of toast on both sides & add cinnamon as it’s cooking. Cut the peach into slices & add to pan. Cook until browned on each side. Top the french toast with the peaches, add honey, a dash of cinnamon, & any other toppings of your choice. Makes 2 Servings. Enjoy!

Planning Thanksgiving Recipes Helps Make Holiday More Fun

Turkey Day is almost here, and JC Food Mart is here to help you plan to make the day with your family and friends special.

Getting ready for the day can be less stressful if planning in advance. Here are some tips to help make the day full of fun.

PLANNING IS THE KEY

The most important step is planning in advance. Plan your menu, plan your shopping and plan what you can make in advance. Remember, simple is usually better.

Get all your shopping done as early as possible. One way to save time and money is by getting all your WIC foods at JC Food Mart early in the week. Click on our blog post here for our special Thanksgiving Week hours. WIC Shopping

Use your WIC fruit and vegetable allowance to pick up produce for your Thanksgiving sides: potatoes, onions, carrots, frozen vegetables and fruit just to name a few. Beans, another WIC-approved food, also make a great Thanksgiving Day side. Cheese can add excitement to a side like broccoli. Looking for a good recipe, check this one out: broccoli and cheese.

There are so many recipes options for creating a Thanksgiving Day menu, and they don’t have to be complicated or use 100 ingredients. Simple is usually better. Use ingredients you have to plan your menu. You can make a list on your phone or the old-fashioned way with paper and pencil. Making a list will help you make sure you have everything you need, and help plan out your recipes.

SIMPLE IS BETTER

Does the thought of cooking turkey stress you out? You don’t have to cook an entire turkey. Make a small turkey breast or turkey tenderloin. They are much less intimidating and usually cost less than cooking an entire bird. Or, roast a chicken. You could also skip making a traditional Thanksgiving and opt for making your family’s favorite meal.

ENJOY ALL THE MOMENTS

Spending time with your kids, family and friends is the best part of the day. After your meal, find time to play outside or go for a walk. It’s a great activity for the whole family. Celebrate July 4th With American Picnic Using WIC Foods

The heart of the summer – July 4th – is almost here. 

Grilling, cold fruit and fresh sides are the perfect ingredients for a holiday picnic. To help make your planning a little easier, here are two perfect recipes featuring WIC foods. 

The first recipe will cool you off from that hot summer sun, but offers the ‘blue’ and ‘white’ for your red, white and blue menu. These little bites pair perfectly with a cold watermelon.  They may be such a hit with the kids, that you want to keep some in the freezer for the next few months. 

WIC Fruits: Blueberries FROZEN YOGURT BLUEBERRY BITES

1 8-ounce container of Blueberries

½ cup Vanilla Yogurt

Cover a large baking sheet with wax paper. Place yogurt in a small bowl and stir. Poke blueberry one at a time with a toothpick and dip into yogurt until it is completely covered. Move blueberry from toothpick onto wax-covered baking sheet. Repeat with all blueberries. Place in the freezer for 2 hours. Remove blueberries from wax paper using a spatula. Once frozen, place all blueberries into an airtight freezer-safe bowl with lid and until ready to eat. Can store in the freezer for a few months. 

This next recipe is easy to add any vegetables from your refrigerator. Feel free to cut and use what you have. Substitution ideas include broccoli, olives, carrots or really anything you like.

Whole Wheat Pasta Salad

COLORFUL RAINBOW PASTA SALAD

8 ounces of Dried Pasta (such as Rotini)

1 package of Italian Salad Dressing mix

2 Roma Tomatoes, diced

½ Onion, sliced thin

1 Zucchini squash, sliced thin

1 Yellow Squash, sliced thin

Pepper to taste

Cook pasta according to package directions and drain.  Prepare Italian seasoning mix according to directions. Mix dressing and pasta in a large bowl. Add cut vegetables. Refrigerate for at least an hour before serving.

Summertime Pasta Recipe

Try This Recipe For Whole Wheat Pasta (A WIC Food) The Whole Family Will Enjoy

It’s summertime. That means parents need healthy, fast, no-fuss recipes that are also kid-friendly. If you are looking for a quick meal using WIC foods, try this pasta recipe.

You may find yourself using this recipe again and again this summer.  It’s easy, fast and doesn’t heat up the kitchen during those warm summer months. It’s great for lunch, dinner and makes enough for leftovers. The best part, it features several WIC foods.

 

WIC Pasta Recipe

 

 

 

 

WHOLE WHEAT PASTA AND BROCCOLI

1 16oz box of Whole Wheat Pasta, any kind (elbows, bow ties, spirals or even spaghetti)

3 cups of  Broccoli, fresh or frozen works

4 tbsp Butter

3 cloves Garlic, minced

2/3 cup Parmesan cheese, shredded or grated

1.5 to 2 cups of reserved Pasta water

Cooked Boneless Chicken, optional

Cook pasta according to package directions. When you have about 5 minutes remaining, add the broccoli.  Once broccoli is tender, drain water In a large colander. Use the cooking pot to melt the butter on low heat. Add minced garlic and saute for a few minutes, stirring often. Add pasta and broccoli back into the pot. Add cheese and pasta water. Stir until the cheese is mixed thoroughly. Mix in cooked, cut up, boneless chicken chunks if using. Enjoy!

These easy and quick, less-fuss recipes are easy to make and perfect for prepping early in the week to make your lunches easy and fast to grab. Afterall, nobody wants to waste precious time during the week fussing over cooking. If you are meal prepping, consider our notes at the end of each recipe to help make it even easier.

The best part about all these recipes is they are easily adjustable to add or subtract some of your favorite ingredients to make it perfectly yours. Here are 4 lunches with WIC foods:

Rice Bowl Using WIC Foods

 

 

 

 

 

VEGGIE RICE BOWL

1 Cup Brown Rice, cooked

1/2 Cup Sliced Cucumbers

1 Sliced Tomato

Sliced Onion

1 Avocado

1/2 cup Cooked Green Peas

2 teaspoon Olive Oil

Juice from a Lemon or Lime

2 teaspoon Dijon Mustard

Salt and pepper to taste

Cook rice according to package directions. Put cooked rice in a large bowl. Slice all vegetables and add to the bowl with the rice. Make a dressing in a separate bowl by combining olive oil, lemon or lime juice and dijon mustard. Mix dressing into the rice and vegetable bowl. Add salt and pepper to taste. Makes 2 bowls. Enjoy!

MEAL PREP TIP: To make this recipe faster, prep the dressing in advance and store in the refrigerator. You can also pre-cook the rice and store in the fridge. Slice and dice cucumbers, tomato and onion (along with cooked peas) when prepping and store in the refrigerator. Add avocado right before eating.

Stuffed Peppers with WIC Foods

 

 

 

 

 

BEAN & VEGGIE STUFFED PEPPERS

4 Bell Peppers

1 tablespoon of Olive Oil

1/2 cup Onion, Diced

½ cup of Corn, optional

1 15 oz can Black Beans, drained and rinsed

2 cloves Garlic, minced

1 tsp Cumin

1/2 tsp Chili Powder

1 8 oz can of Tomato Sauce

1 cup cooked Brown Rice

1 cup of Cheese, shredded

Preheat oven to 350 degrees. Remove tops from peppers. Scoop out and clean the inside of the peppers. Saute onions in olive oil until they are tender. Add garlic and continue cooking for another minute. Stir in mashed black beans, cooked corn, cumin and chili powder. Add tomato sauce and cook for 1 more minute. Remove from heat and stir in cooked rice. Fill peppers with the mixture and place inside a baking dish. Top each pepper with shredded cheese and bake for 30 minutes or until the cheese is melted.

MEAL PREP TIP: This meal can be cooked a day in advance and stored in the fridge. Reheat before serving.

Tuna Lettuce Wraps with WIC Foods

 

 

 

 

 

LETTUCE TUNA SALAD WRAPS

¼ cup diced Bell Pepper

¼ cup diced Cucumber

¼ cup diced Onion

1 can of Tuna, drained

¼ cup of Mayonnaise

Salt and Pepper to taste

4 large torn Lettuce Leafs

Mix all ingredients together in a medium size bowl. Chill before serving. Scoop desired amount of tuna salad into a large lettuce leaf and roll up. Enjoy!

MEAL PREP TIP: Tuna can be made and stored in the fridge for a few days.

Avocado Toast with WIC Foods

 

 

 

 

 

AVOCADO, BOILED EGG ON WHOLE WHEAT TOAST

1 slice of Whole Wheat Toast

1 Egg, boiled

½ Avocado, mashed

Salt and pepper to taste

Boil egg in water for 10 minutes, until cooked. Drain, rinse and cool before removing shell and slice. Mash the inside of avocado and spread onto toast. Place sliced boiled egg on top of avocado toast. Season with salt and pepper and serve.

MEAL PREP TIP: Boil egg in advance and store in fridge.
